Ingredients

For the Vanilla Cake Layers:

  • 2 ½ cups all-purpose flour – Provides structure and a soft tender crumb.
  • 2 ½ tsp baking powder – Helps the cake rise and stay fluffy.
  • ½ tsp salt – Enhances the flavors and balances sweetness.
  • 1 cup unsalted butter softened – Adds richness and moisture.
  • 2 cups granulated sugar – Creates sweetness and a delicate texture.
  • 4 large eggs – Binds the ingredients and gives structure.
  • 1 tbsp pure vanilla extract – Enhances the cake’s warm sweet aroma.
  • 1 cup whole milk – Keeps the cake moist and tender.

For the Cheesecake Layer:

  • 16 oz cream cheese softened – The star ingredient for a smooth, creamy texture.
  • ½ cup granulated sugar – Provides just the right amount of sweetness without being too strong.
  • 2 large eggs – Helps set the cheesecake while keeping it silky.
  • 1 tsp vanilla extract – Complements the richness of the cream cheese.
  • ½ cup sour cream – Contributes creaminess with a subtle tang for a perfect balance.

For the Strawberry Topping:

  • 2 cups fresh strawberries chopped – Naturally sweet and bursting with flavor.
  • ½ cup granulated sugar – Helps release the strawberries’ juices.
  • 1 tbsp lemon juice – Enhances the fresh berry taste with a hint of brightness.
  • 1 tbsp cornstarch + 2 tbsp water – Thickens the topping for a perfect texture.

For the Frosting:

  • 1 cup unsalted butter softened – Creates a rich, creamy base.
  • 4 cups powdered sugar – Adds sweetness and structure to the frosting.
  • 8 oz cream cheese softened – Brings a smooth, tangy contrast.
  • 1 tsp vanilla extract – Rounds out the flavor with a touch of warmth.
  • 2 tbsp heavy cream – Ensures a silky spreadable consistency.

A Few Ingredient Tips:

  • ✔ Room Temperature Ingredients – Ensure butter eggs, and cream cheese are at room temp for a smooth batter.
  • ✔ Fresh vs. Frozen Strawberries – Fresh is best but frozen can just thaw and drain excess liquid.
  • ✔ Substitutes – Swap whole milk for buttermilk for extra tenderness or use Greek yogurt instead of sour cream for a protein boost.

Instructions

Step 1: Prepare the Cheesecake Layer

  • Preheat & Prep – Preheat your oven to 325°F (163°C). Line a 9-inch springform pan with parchment paper and lightly coat the sides with grease
  • Mix the Cheesecake Batter – In a large bowl, beat cream cheese and granulated sugar until smooth and creamy. Add sour cream, vanilla extract, and eggs one at a time, mixing gently to avoid overbeating.
  • Bake & Chill – Pour the batter into the pan and bake for 30-35 minutes, or until the center is set. Let it cool completely, then refrigerate for at least 2 hours (or overnight) for best results.

Step 2: Bake the Cake Layers

  • Preheat Oven – Set to 350°F (177°C) and prepare two 9-inch round cake pans by greasing and lining them with parchment paper.
  • Make the Batter – Cream together butter and sugar, then add eggs one at a time. Mix in vanilla extract and alternate adding dry ingredients (flour, baking powder, salt) with milk, stirring until smooth.
  • Bake the Cakes – Evenly distribute the batter between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool completely before assembling.

Step 3: Assemble the Cake

  • Level the Cake Layers – If needed, trim the tops of the cake layers to ensure a flat surface for stacking.
  • Stack the Cheesecake – Place one cake layer on a serving plate, then carefully place the chilled cheesecake on top. Add the second cake layer over the cheesecake.
  • Frost the Cake – Spread a generous layer of cream cheese frosting evenly over the cake, smoothing the top and sides.

Step 4: Add the Strawberry Topping

  • Prepare the Topping – In a saucepan, combine strawberries, sugar, and lemon juice over medium heat. Stir occasionally until the strawberries break down and the sauce thickens. Let it cool slightly.
  • Drizzle & Decorate – Pour the strawberry topping over the frosted cake, letting it gently drip down the sides. Top with fresh strawberries for a beautiful and elegant finish.
